This is totally delicious! Use whatever fresh plums you have on hand. These plums are meant to be eaten within a short timeframe after preparation.

6 fresh plums, pitted and thinly sliced
1 carrot, cut into 1/4-inch julienne or thin rounds
1/2 onion, thinly sliced
1-inch piece fresh ginger, finely chopped, or 1/2 t ground ginger
1-1/2 t  salt
1 T sugar, optional
1/3 c rice vinegar or white wine vinegar
1/3 c water

1. Toss plums, carrot, onion, and ginger together until well-mixed.

2. In a separate bowl, mix together salt, sugar, rice vinegar, and water. Stir until salt and sugar are completely dissolved. Pour over plum mixture.

3. Place mixture in covered container and refrigerate for at least 4 hours or overnight.

4. Drain, reserving liquid, and serve as a condiment to grilled chicken, pork or beef, or as a starter salad. Put any uneaten plums back into liquid, and store, covered, in the refrigerator.
