2 large pears, peeled, cored, and cubed
2 T liquid honey

Gingerbread Topping:
1/2 c butter, softened
1/2 c sugar
1/4 c molasses
1 egg
3/4 c all-purpose flour, white or whole wheat
1 t ground ginger
1 t ground cinnamon
1/2 t baking soda
1/4 t ground cloves
pinch salt
2/3 c hot water

1. Preheat oven to 350ºF . Place a baking rack in center of the oven.

2. Grease an 8-inch square baking dish. Spread pears in dish; drizzle with honey. Set aside.

3. In a large bowl, beat butter with sugar until fluffy; beat in molasses and egg until combined. In a separate bowl, whisk together flour, ginger, cinnamon, baking soda, cloves, and salt. Stir into molasses mixture alternately with hot water, making 3 additions of dry ingredients with 2 of water. Pour over pears.

4. Bake for 30 to 40 minutes (check after 30 minutes) until a toothpick or cake tester inserted into center of cake part comes out clean. Serve warm, with vanilla ice cream, frozen vanilla yogurt, heavy cream, crème fraîche…
