Totally delicious! I went through a loaf of bread last weekend eating this. It’s like peanut butter and jam using fruit instead of jam. This recipe is adaptable to any number of fruits and nut butters. If you like you can also start with nuts or seeds and bring your own nut/seed butter before adding fruit. Just put the nuts/seeds in the processor and grind to a coarse meal before adding the fruit. This can be eaten over cooked grains as well as bread. It’s really good on ice cream, or try freezing the mixture in ice cube trays for a different frozen treat.

1 c peanut butter
2 c (peeled) chopped peaches
chocolate chips or chocolate pieces, optional
1 T lemon juice, optional; or other fruit juice
cinnamon, or other spices or spice mixes, such as apple pie spice or pumpkin pie spice, to taste
salt, to taste, optional

1. Combine peanut butter, peaches, chocolate, if using, and lemon juice, if using, in a food processor. Whizz until you reach a consistency you like, smooth and creamy or chunky and creamy. Add some spice if you like and whizz to combine. Taste and add a dash of salt if you like. Whizz to incorporate.

2. Store in the refrigerator for a few days, if if lasts that long.
