This can be served as a salsa, a relish or over salad greens.
3 or 4 ripe peaches, peeled and diced
3 or 4 ripe tomatoes, peeled, (seeded) and diced
4 scallions, thinly sliced
1/2 c basil, finely chopped
2 T extra-virgin olive oil
2 T red wine vinegar
1 T honey
1 T lime or lemon juice
salt, to taste
1. Mix everything together. Let sit for an hour or so, to allow the flavors to blend. Serve at room temperature.
