Or nectarine. This is a refreshing condiment. With peaches, it can get a bit soupy and you may need to serve it with a slotted spoon.

4 scallions, finely chopped
1/4 c raisins or other dried fruit (cut up if large)
1 – 2 T sherry or balsamic vinegar
2 t peeled, grated fresh ginger
4 medium peaches, peeled, pitted, and cut into small pieces

1. Combine scallions, raisins, 1 T vinegar, and ginger in a medium bowl. Add peaches and stir to combine. Cover and chill for at least one hour. Just before serving, taste, and add additional 1 T of vinegar if you think it needs it.
