Sweet oranges and spicy black pepper make a flavorful dish. Do try to use freshly ground pepper–it will make a difference here.
1/2 lb ziti, penne, fusilli, or other shaped pasta
2 navel oranges
3 or 4 T butter or oil
1/2 c finely chopped onion
3 or 4 T coarsely chopped walnuts or pecans
1 t (or more) freshly ground coarse black pepper
grated Parmesan cheese
1. Make the sauce while the pasta water comes to the boil and the pasta cooks.
2. Peel oranges. Divide into segments. Cut each segment into 2 or 3 pieces, working over a bowl to catch the juices.
3. In a medium skillet, heat the butter or oil over medium heat and sauté onions until tender, about 7 minutes. Add the nuts and continue to sauté 3 or 4 more minutes. Add the orange segments, any accumulated juice, and the pepper. Toss and stir until the oranges are heated through and exude some juice, about 2 minutes.
4. Toss with the drained pasta. Serve immediately sprinkled with the cheese.
