You can use yellow onions here too.

1 lb parsnips, (peeled) and grated
1 apple, (peeled), cored, and grated
1 to 2 T lemon juice
1 red onion, finely diced
3 T parsley, chopped
2 eggs, beaten
salt and pepper, to taste
vegetable oil, for frying

1. In a large bowl mix the parsnips, apples, lemon juice, onion, and parsley. Gradually add in the beaten egg to bind the mixture.

2. Shape into evenly sized patties. Heat oil in a frying pan. When hot, add patties, flattening with a fork. Cook for about 4 to 5 minutes a side, until done to your liking. You may have to cook them for a bit longer depending on the size of your cakes.
