This is basically a Caesar dressing without egg yolks–mayo is used instead. It’s great on all salads, not just romaine, and perks up steamed veggies.

2 T red wine or cider vinegar
2 T mayonnaise
1/2 t Dijon mustard
1 t soy sauce or Worcestershire sauce
1/4 c grated Parmesan or Pecorino Romano cheese
1/2 t salt
pinch of black pepper
1/2 c olive oil

1. Whisk together all of the ingredients. Will keep, refrigerated, for up to a week.
