If this is a bit pungent for you, add more olive oil.
1/4 c red wine vinegar
1/4 c chopped fresh oregano leaves
2 cloves garlic, chopped
1 t honey or agave
salt and pepper, to taste
3/4 c extra virgin olive oil, or to taste
1. Combine vinegar, oregano, garlic, honey, salt, and pepper in a blender and whizz until smooth. Add olive oil while blender is running until emulsified. Or, combine all ingredients in a jar with a tight-fitting lid and shake until emulsified. In this latter case, chop the oregano as finely as possible.
