You can make this with only Napa cabbage, if you like. You can also vary the other vegetables. A total of about 6 cups of vegetables is the amount you want. The beets will color the other vegetables. If that’s something you don’t like, either make this just before serving, or add the beets just before serving.

3 c thinly sliced Napa cabbage
1 c shredded beets
1 c shredded carrots
1 c shredded Japanese turnips
1/4 c fresh chopped herb(s)
1 t brown sugar
3 T sesame seeds, divided
3 T vegetable oil
3 T lemon juice
2 T rice vinegar, or white wine vinegar
1 T soy sauce
2 t toasted sesame oil
1 t peeled, finely chopped fresh ginger
black pepper, to taste

1. Combine cabbage, beets, carrots, turnips, and fresh herb(s) in a serving bowl.

2. Whisk together sugar, 2 T of the sesame seeds and the remaining ingredients. Pour over vegetables in bowl. Toss until well coated. Allow to marinate for a bit, or not. Sprinkle with remaining tablespoon of sesame seeds and serve.
