Cabbage salads, including slaws, always benefit from a (short) marinade before serving.
3 T apple juice
2 T lemon juice
2 T olive oil, or more, to taste
1/2 t caraway seeds, lightly crushed
salt and pepper, to taste
4 c thinly sliced Napa cabbage
2 c shredded carrots
1 large apple, quartered, cored, and thinly sliced crosswise; or diced
chopped fresh parsley, optional
1. Whisk together apple juice, lemon juice, oil, caraway seeds, salt, and pepper.
2. Combine cabbage, carrots, and apple in a serving bowl. Add dressing. Toss to combine. Let stand at room temperature, tossing occasionally, for about half an hour to allow the flavors to blend and the cabbage to wilt.
