This is actually a wilted cabbage salad; it’s not fermented as true sauerkraut is. The recipe does need to be made at least 2 hours before serving. Try other oils and/or vinegars, if you like.

6 c thinly sliced cabbage
4 T olive oil
1/2 c apple cider vinegar
salt and pepper, to taste

1. Combine all ingredients and mix well. Let sit for at least 2 hours, if possible, stirring now and then.
