You can mix herbs or use all one herb. This is a simpler version of the cilantro-lime butter recipe of a few weeks back.
2 c salted or unsalted butter, softened
1/4 – 1/2 c chopped fresh herbs
1 T minced garlic, optional
1. In a medium bowl, cream the butter with an electric mixer or by hand until very soft and fluffy. Add the herbs, and garlic, if using, and combine thoroughly. Cover and refrigerate until just firm enough to shape into sticks.
2. Working quickly, use your hands to shape the butter into 4 sticks or logs, each about 1-inch thick. Transfer one of the logs/sticks to a covered butter dish and refrigerate or wrap each log/stick in waxed paper and store them in the freezer.
