Kale, or any other greens…This makes for a good pasta sauce as well.

2 T olive oil
1 clove garlic, minced
1/2 c chopped scallions
1/2 c chopped red bell pepper
1 bunch kale, stemmed and chopped
1/4 c broth or water, if necessary
salt and pepper to taste
lemon juice, to taste

1. In a large skillet, heat oil over medium heat. Add garlic, scallions, and red pepper. Sauté for about 5 minutes, stirring occasionally.

2. Add chopped kale or other greens and cook, stirring, until kale is well coated with the red pepper mixture. Continue to cook, uncovered, until kale wilts and becomes tender, adding the 1/4 c broth or water if the pan is getting dry.

3. Once most of the liquid has evaporated, season with salt and pepper to taste, along with a splash of lemon juice. Serve at once.
