This is a simple salad dressing that can be thrown together in a couple of minutes. The original recipe has no oil in it–it’s just the first three ingredients, and by all means try it that way if you like. For me, the original was too sharp and too sweet; the oil tempers the ingredients. Increase the proportions as you see fit.
3 T balsamic or other vinegar
2 T mustard, your call
1 T maple syrup or agave syrup or brown rice syrup
9 – 12 T extra-virgin olive oil, optional
1 crushed garlic clove, optional
salt and pepper, to taste, optional
1. Combine all ingredients in a jar and shake to emulsify.
