6 T butter, in pieces
1 c flour (white, white whole wheat, or a combination)
1/2 c – 1 c sugar (your call)
1-1/2 t baking powder
3/4 – 1 c milk (you’ll need a full cup if you use ww flour)
1-1/2 c – 2 c peeled peaches, or plums, chopped up (or any fruit)
1. Preheat oven to 350ºF.
2. Either melt butter and put into an 8-inch square baking dish (or other baking dish) or put butter into baking dish and then into the oven for a few minutes to melt.
3. Mix flour, sugar, and baking powder. Whisk in milk until smooth.
4. Pour batter over melted butter in pan. Do not stir. Distribute chopped fruit over batter. Do not stir either. (This is where the ‘magic’ happens.)
5. Bake for about 35 minutes, or until a toothpick inserted into the center portion of the cobbler comes out clean. Let sit for a few minutes before serving, while you marvel at the “magic”!
