This is an intense, but tasty dressing. If you think that one-half cup of soy sauce is too much, reverse the water/soy ratios. Or, use Bragg’s Liquid Aminos, a soy sauce substitute that is milder and less salty. Of shoyu and tamari, I think shoyu is the better choice for this dressing.

1/2 c soy sauce
1/4 c water
1/4 c dark (toasted) sesame oil
6 T lemon juice, or to taste
4 garlic cloves, minced
1 t lemon zest, optional

1. Combine all ingredients in a glass jar and shake well. This dressing keeps very well in the refrigerator.
