Double, triple the ingredients as necessary. Try with other cheeses.
1 cup coarsely chopped cooked greens
1/4 c crumbled (feta) cheese
black pepper, to taste
2 flour tortillas (7″)
1. Preheat oven 300ºF.
2. Spoon 1/2 cup greens down center of each tortilla. Top each with 2 T of (feta) cheese. Sprinkle with pepper. Fold left and right sides of tortilla toward the center, overlapping the edges. Wrap in foil and bake 10 minutes.
