1 medium leek, white and palest green portions only
2 – 3 juicy oranges
Extra-virgin olive oil
Sea salt and pepper

1. Slice trimmed leeks into thin rings. Separate rings and rinse in cold water to remove any hidden grit. Drain and dry well.

2. Peel and cut oranges into slices or chunks. Arrange prepared oranges on a serving dish and scatter leeks over top. Drizzle salad with olive oil, and season with salt and freshly ground pepper. Toss gently.
