This is great on its own, as a side dish. It’s almost a condiment, somewhat like a salsa or relish. You can also mix it with 4 to 6 cups of tender lettuces.
The recipe calls for 8 ounces of chives, if you have less, adjust the other ingredients accordingly.
2 T roasted sesame oil
1/2 t crushed red chile flakes, or to taste
2 T soy sauce
1 T rice vinegar or other mild vinegar
1 t sugar
1 T water
8 ounces fresh chives
4-6 cups tender lettuces, or mixed lettuces, optional
1 T toasted sesame seeds for garnish, optional
1. Make dressing by combining sesame oil with chili flakes, soy sauce, vinegar, garlic, sugar, and water.
2. Wash and dry chives, then cut them into 1- or 2-inch lengths. If making just chive salad, mix dressing with chives and garnish with sesame seeds. If using lettuces, mix chives with lettuces, then pour dressing over all and mix again. Garnish with sesame seeds.
