Delicious! The perfect start to a summer meal; with some bread and cheese, a tasty lunch; or just a refreshing afternoon drink. If you don’t have any of Native Offerings’ kimchi, look for some in the produce section of supermarkets. If you use a large cucumber, seed it first, as the cucumber seeds can be bitter when pureed.
3 c (peeled), (seeded), chopped tomatoes
1/2 – 1 c kimchi with juice (chopped up some if in large pieces)
1/2 c peeled and chopped (Kirby) cucumber
1 large garlic clove, chopped
2 – 3 T rice wine (or other mild) vinegar
salt and pepper, to taste
minced chives or scallion tops, for garnish, optional
1. In a blender, puree tomatoes, kimchi, cucumber, and garlic. Pour into a bowl. Add vinegar, salt, and pepper. Taste for seasonings. Chill. Nice served in glasses with a spoon alongside.
