Callaloo is a Caribbean dish that has numerous variants. Each island has its own version, and within each island there are many versions. Callaloo is basically a saucy dish made with a green leafy vegetable, so use whatever greens you have on hand, adjusting the cooking time as necessary.
3 slices bacon, coarsely chopped, or 2 T vegetable oil
1 c chopped onion
1 bunch kale, stemmed and coarsely chopped
1/2 c coconut milk
1/2 c broth, plus extra if needed
salt and pepper, to taste
1. In a large skillet, cook bacon until the bacon begins to render its fat. Or, heat oil in skillet. Add onions and cook until softened, about 5 minutes or so. Add kale and stir to combine with bacon and onion.
2. Cook, stirring, until kale is wilted. Add coconut milk and broth and bring to a simmer. Simmer until the kale has softened and/or is cooked to your preference. Add more broth if the liquid is evaporating before the kale is done. Season with salt and pepper.
