This is best if you can let it marinate for about an hour before serving; it’s still excellent eaten immediately.

1-1/2 to 2 c sliced or diced red radishes
1 T white wine vinegar, or apple cider vinegar
1 T oil
1 t caraway seeds
2 T chopped fresh herb, or to taste
1 clove garlic, minced
a pinch of sugar, optional
salt and pepper, to taste

1. Put the radishes in a serving bowl.

2. Combine the remaining ingredients in a small bowl. Pour over radishes. Toss to combine. Cover and refrigerate for an hour before serving.
