Try any fresh herbs you have on hand, such as basil, dill, tarragon, parsley…

5 beets
2 to 3 T fresh herb, chopped
1/4 c red onion, finely chopped
1 t sea salt
2 T balsamic vinegar
2 T olive oil
1 clove garlic, finely minced
Freshly-ground black pepper, to taste
Sprigs of fresh herb, for garnish

1. Place beets in a medium-sized pot and cover with water. Bring to a boil. Reduce heat to a low simmer, cover, simmer beets until they are tender. Remove from heat, drain, and set aside until cool enough to handle.

2. In a serving bowl, combine the remaining ingredients.

3. Peel beets, if desired. Slice into thin rounds.  Add to dressing in  bowl and stir together.

3. Chill salad for 1 or 2 hours to allow beets to absorb the flavors in the sauce.  Serve chilled,  garnished with a few sprigs of fresh herb.
