This dish is also known as “Ontario Greens”–a tribute to Farmer Stew’s birthplace!
1 large bunch greens
2 T butter
1 large onion, chopped
1 tablespoon minced garlic
salt and pepper, to taste
1/2 c sour cream
1. Wash greens and coarsely chop. Steam or cook the greens until nearly cooked but still bright-colored. Drain, if necessary.
2. Melt butter in a large skillet over medium heat. Add onion and garlic and sauté until soft, stirring occasionally. Stir in the greens. Season to taste with salt and pepper. Stir in the sour cream, let warm briefly. Serve immediately.
