A Southern take on greens.
1 bunch fresh greens, washed, drained and chopped
salt and pepper, to taste
hot pepper vinegar (recipe follows)
1. Cook greens according to your preference–steam, saute, or cover with water and simmer. Remove from pan or pot and drain, if necessary.
2. Place the greens in a serving bowl and season with salt, pepper, and the hot pepper vinegar to taste. Top with butter, if desired.
Hot Pepper Vinegar:
This keeps indefinitely, refrigerated or not. Try it as an element in salad dressing.
1 c apple cider vinegar
1/4 t – 1 T Tabasco or other hot sauce OR 1/8t – 1 t cayenne, or to taste
1. In a cruet or a glass jar, combine the vinegar and hot pepper sauce or cayenne to taste. Shake before using.
