Adobo here means a dish cooked with garlic, soy sauce, black pepper, and vinegar. This is a good way to cook tops of root vegetables, as well as most greens.

3 garlic cloves, sliced
2 T vegetable oil
5 c chopped greens (the brassica mix, for example), washed and well drained
2 T soy sauce
1 T white or rice vinegar
freshly ground black pepper to taste

1. In a wok or large skillet, stir-fry the garlic pieces until just golden (they can burn fast at this point, so be watchful). Remove with a slotted spoon and reserve.

2. Add the greens and toss over high heat until wilted. Turn off the heat. Stir in the soy sauce and vinegar and grind or toss some pepper on top. Return the fried garlic pieces and stir them in. Serve at once.
