Yum. You can, of course, use other colors of bell peppers.
2 c coarsely grated Cheddar cheese
1 large or 2 medium green bell peppers, seeded, ribbed, sliced into thin strips or coarsely chopped
1/2 c finely chopped (sweet) onion or scallions
1/2 c mayonnaise
1 T (Dijon) mustard
salt and pepper, to taste
curry powder, or other spice mixture, optional
cooked, crumbled bacon, optional
1. Combine the cheese, pepper(s), and onion in a bowl. Toss to distribute evenly. Add the mayo and mustard, and stir to combine. Taste. Add some salt and pepper, if you like. You could toss in some curry or other spice mixture if you like, too. If you have some cooked, crumbled bacon in the fridge, or have the energy to make some, sprinkle it on top of the spread–adds deliciousness.
