The versatility of greens beans always amazes me each summer. They’re great on their own, lightly steamed with a touch of salt, and they also pair so well with practically any sauce or dressing. Here’s a current favorite.

4 c or so green beans, trimmed and cut  into 2″ lengths
1/4 c sour cream or greek yogurt
1 T mayonnaise
2 T bottled horseradish, drained if very wet, or to taste
1 t cider or other vinegar
salt and pepper, to taste
fresh chopped herb, for garnish (dill is awesome here)

1. Steam, boil, or roast beans until done to your liking. (If roasting you might toss with a bit of oil before putting in the oven.) Drain if necessary and transfer to a serving bowl.

2. Meanwhile, combine sour cream, mayonnaise, horseradish, vinegar, salt, and pepper. Add to green beans and toss to combine. Taste a bean, and add more of any of the dressing ingredients if necessary. Sprinkle with chopped herb and serve.
