The tomato forms a sauce for the beans.

2 T olive oil
1 medium onion, sliced into thin rounds
1 clove garlic, minced
1-1/2 lbs green beans, trimmed and cut into 2 inch lengths
1 large tomato, diced (peeled and seeded, if desired)
stock or water
2 T chopped fresh herbs: parsley, dill, basil, oregano…
salt and pepper, to taste

1. Heat oil in a skillet over medium heat. Add onions and cook until soft, about 5 minutes. Add the garlic, beans, tomato, and enough stock or water just to cover. Simmer until the beans are tender.

2. Add the fresh herbs and simmer a couple of minutes more. Season with salt and pepper to taste. Serve hot, at room temperature, or even chilled.
