I love all the cabbage that comes in the shares, and I thought I’d share some the ways I use it. One of the simplest, fastest, and best, is the following.
Take one head green cabbage.
(savoy is especially tasty)
4 cloves garlic, peeled
two tbs butter
two tbs cooking oil
Remove core of cabbage, and quarter. Slice into quarter inch shreds. Add oil and butter to pan and melt over medium heat. Place cabbage into deep saute pan with the butter and oil. It will decrease as it cooks. Gently saute and turn in pan until cabbage begins to wilt. Add garlic cloves. Saute until cabbage begins to brown.
Is excellent with pan fried pork chops. and roast duck.
