The amount of sugar used in this ‘catsup’ will depend on the sweetness of the fruit…

2 c sliced plums, peaches, or nectarines (pitted, and peaches peeled)
1/2  – 1 c sugar, or to taste
1/2 c apple cider vinegar (or white wine vinegar)
1-1/2 t ground cinnamon
1/2 t ground mace or nutmeg
1/4 t ground ginger
1/8 t ground cloves
1/8 t salt

1. In a medium, nonreactive saucepan, combine ingredients. Bring to a boil, reduce heat and simmer for about half an hour until the mixture thickens and is reduced to about 2 cups. This may take longer, depending on how thick you want the catsup. Store in a jar in the refrigerator.
