Terrific on hot dogs, burgers…The pineapple really makes this relish work.

1 c apple cider vinegar
1/4 c sugar
1/4 t ground cloves
1/4 t ground cinnamon
1/8 t dry mustard
1/8 t salt
1/2 c crushed canned pineapple with juice
4 c coarsely chopped fresh mustard greens
1 small red bell pepper, seeded and coarsely chopped
1/2 medium (red) onion, coarsely chopped

1. Combine the vinegar and sugar in a non-reactive saucepan. Bring to a boil, stirring to dissolve the sugar. Reduce the heat and stir in the cloves, cinnamon, dry mustard, and salt. Simmer the mixture, uncovered, stirring frequently, until the liquid is reduced slightly, about 20 minutes. Increase the heat to high and add the pineapple and juice. Cook 10 minutes longer, stirring frequently until thickened and syrupy. Cool at least one hour.

2. Meanwhile, place the greens, bell pepper, and onion in the bowl of a food processor. Process until minced. When the vinegar mixture has cooled, combine with minced greens mixture, stirring well to combine. The relish may be made ahead and refrigerated.
