A condiment from India. This relish should be spicy hot, so add as much cayenne as you wish! Refrigerated, this will keep for several days.

1 c minced onion
4 t lemon or lime juice
1/2 t sweet paprika
1/4 – 1/2 t cayenne, or to taste
salt, to taste

1. If you prefer less pungency from the onion, soak in salted water to cover for about 30 minutes and then drain and rinse. Red onions are less pungent than yellow.

2. Combine all ingredients and let sit  for about 30 minutes to allow the flavors to blend.
