Feta, crumbled, can substitute for ricotta.

1-lb ripe tomatoes, cored and cubed, or finely chopped
2 T extra virgin olive oil
1-1/2 T fresh chopped basil, or to taste
large pinch (sea) salt
1/2 c ricotta cheese, lightly broken into clumps
2 t capers, or chopped green olives, or chopped pickles

1. In a medium bowl combine tomatoes, oil, basil, and salt. Let sit 5 minutes. Gently scatter ricotta on top. Do not stir in. Garnish with capers, and serve.
