The edamame needs to be shelled for this recipe; this is where children come in handy…

1 c brown rice
2 c shelled edamame
1/2 c dried cranberries, or raisins, or other dried fruit (chopped if necessary)
1 c crumbled feta cheese
1/2 – 3/4 c kalamata olives, halved
3 T chopped cilantro, or parsley, or basil…
2 T olive oil
2 T lime juice, or lemon juice, or mild white vinegar
1/4 – 1/2 t crushed red pepper flakes
salt and pepper, to taste

1. Cook brown rice according to your preferred method. Let cool some, but keep warm–it’s easier to mix when warm.

2. Bring some salted water to the boil. Add shelled edamame and cook for 2 minutes, or until tender. Drain and set aside.

3. Toss together warm rice, edamame, dried fruit, feta cheese, olive oil, lime juice, and red pepper flakes in a serving bowl. Season with salt and pepper to taste, keeping in mind that both feta cheese and olives are salty. Taste for seasonings, adding more olive oil and lime juice if you like.
