No juicer? Use a blender instead! There is no need to peel the tomatoes: the skin adds extra flavor, texture and nutrients.

fresh, ripe tomatoes
sea salt
lemon zest, optional

1. Wash and core tomatoes. Cut into quarters. Place in blender. Whizz until tomatoes are a smooth puree. Add some sea salt and lemon zest to taste.

2. Now, you can drink as is, or you can heat it up for soup. Add some cream or stock, some herbs, salt, and pepper. Or you can freeze it for future use.

3. You can also pour the contents of the blender into a large, fine mesh sieve set over a bowl. Using a wooden spoon or spatula, mash the juice through the sieve. This will get rid of any seeds and skins that weren’t pureed. Then use as in #2.
