Delicious! This is great on salads. When all the ingredients are in the blender you may think there’s not enough liquid, but the cucumber will release a substantial amount of liquid once puréed and the dressing should have the proper, pourable salad dressing consistency. If not, add small amounts of water until it has a consistency you like. The dressing is thick, but pourable.

1 medium cucumber, peeled, seeded, and coarsely chopped
1/2 c extra-virgin olive oil
1/4 c red wine vinegar, rice vinegar or white wine vinegar
1/2 c fresh chopped herb, a combination, if possible
2 T yogurt, sour cream, crème fraîche, or heavy cream
2 t (Dijon) mustard
2 t prepared horseradish
1 t salt, or to taste

1. Put ingredients in a blender and purée until smooth. Transfer to a jar. Use immediately or refrigerate.
