Try these instead of popcorn or potato chips…
1 1/2 c shelled fresh edamame
1 T vegetable oil
1/4 c grated Parmesan or Romano cheese
salt and pepper, to taste
1. Preheat oven to 400°F. Cook edamame in boiling water for about 3 or 4 minutes. Drain. Dry on a kitchen towel. Transfer to a bowl. Toss with oil, cheese, salt, and pepper.
2. Line a baking sheet or other suitable baking dish with parchment. This will make clean up easier. Transfer edamame to the baking sheet. Spread them out. Bake for about 15 minutes, until the cheese has formed a crispy layer around the edamame.
