You will want to try this on everything you eat…
1/3 c dry white wine
2 shallots, minced or 1/3 c minced scallions, white and light green parts only
1-1/2 t fresh tarragon, minced, or 1/2 t dried tarragon
2/3 c mayonnaise
pinch of cayenne
pinch of turmeric (optional)
salt, to taste
1 large tomato, peeled, seeded, and finely chopped
1. Combine the wine, shallots, and tarragon in a small saucepan. Bring to a boil over medium-high heat and boil until the liquid is reduced by one-half (or a good approximation–you just want to concentrate the flavors), 2 to 3 minutes.
2. Place this reduced mixture in a (small) food processor or blender along with the mayonnaise, cayenne, turmeric (if using), and salt and process until smooth. Stir in the tomato, then taste and adjust the seasonings. You can buzz the tomato with the other ingredients if you want a smoother sauce. This will keep, covered, 2 or 3 days in the refrigerator.
