5 c sliced or diced potatoes
1 medium onion, sliced or diced
salt and (white) pepper, to taste
3 T butter
3 c milk, more or less
1 T finely chopped fresh parsley or other herb, or 1 t dried (dill is great here)

1. Put potatoes and onion in a soup pot or saucepan and barely cover with cold water. Add salt and pepper and heat to boiling. Reduce heat to a simmer, cover, and cook for about 10 minutes or until potatoes are very tender.

2. Remove from heat. Let cool some, then mash potatoes in their liquid. Add butter and stir to melt. Add enough milk to achieve the desired consistency.

3. Reheat to a simmer. Taste for seasonings. Serve, garnished with herb, fresh or dried.
