1/2 c walnuts, coarsely chopped
1/4 t salt
1/2 t paprika, hot or sweet
1/3 c warm water
2 gloves garlic, minced
3 T olive oil
1 c packed cilantro leaves, chopped
2 T lemon juice

1. In a food processor, grind walnuts with salt and paprika. You want the mixture to be paste-like. Blend in just enough warm water to make walnuts turn creamy and light colored. Scrape into a small bowl.

2. Put oil in a skillet. Add garlic and cilantro and turn heat to medium-low. Cook, stirring, for 2 to 3 minutes until the ingredients begin to sizzle. Don’t let anything burn.

3. Add skillet contents to walnut mixture along with lemon juice. You may need to add a bit more water to give the sauce an even consistency. Taste for seasoning. Serve at room temperature.
