This can be served at once or chilled before serving.

6 – 8 c finely chopped choi, stems and leaves
1 carrot, coarsely grated
1/2 c sweet or red onion, finely sliced
1 large apple, cored and chopped or sliced
3 – 4 T mayonnaise
2 – 3 t white wine, apple cider, or rice vinegar
2 t maple syrup, agave, or sugar
1 t celery seed or 1/2 t celery salt
salt and pepper, to taste

1. Combine choi, carrot, onion, and apple in a serving bowl. Toss gently.

2. In a small bowl, combine remaining ingredients and mix. Add to choi mixture. Toss to combine. Taste for seasonings.
