1 c bittersweet or semisweet chocolate (chips)
1/2 c raw cashews
1/3 c water
1-1/2 c strawberries, sliced
1/4 c maple syrup
1 t vanilla extract
1. If you’re not using chocolate chips, coarsely chop the chocolate. Melt the chocolate in a double boiler or a bowl set over a pot of simmering water, stirring more or less constantly. This won’t take long. Set aside.
2. In a food processor or blender, grind the cashews to a powder. Add the water and blend until smooth. Add the strawberries, maple syrup, and vanilla. Process until strawberries are pureed. Add the melted chocolate and blend until incorporated.
3. Transfer to small individual ramekins or cups (this serves four) or a bowl. Cover and refrigerate until well chilled.
