I made a great slaw out of chinese cabbage, inspired from Vegetarian cooking for everyone. It's really simple. Chop an onion finely and add rice vinegar. Let sit while you thinly chop a medium sized chinese cabbage. Add this to your onion and vinegar. Add olive oil and salt to taste. Let sit for 10 minutes while you prepare the rest of your meal and just before serving add chopped cilantro (I used 1 whole bunch)!
