Crazy good. A riff on cucumber and buttermilk and/or yogurt soup, but with tomatoes. Fresh, refreshing, delish. You could also make this with other fruits (tomato botanically a fruit), for a terrific breakfast or easy dessert. Add a dash of honey, agave, maple syrup, or sugar to the traditional fruit mixture for an easy dessert. In this tomato recipe, you can add any number of flavorings and garnishes, though it is just great on its own.
2 largish tomatoes, peeled if you like, coarsely chopped,plus extra for garnish, if you like
2 c yogurt, sour cream, buttermilk, whole milk, non dairy substitutes; or a combination
a handful of fresh herb, such as basil, cilantro, dill, parsley, or a combination, plus extra for garnish
1 t spice, such as curry powder, chili powder, paprika, etc., or to taste
salt and pepper, to taste
chopped zucchini, red pepper, scallion, cucumber, etc., for garnish, if you like
1. Put tomatoes, yogurt, fresh herb, any spice, if using, salt, and pepper in a blender or food processor. Purée until smooth or leave a little bit chunky. Taste for seasonings. Serve or refrigerate until ready to serve.
