Double the recipe if you like (this serves 2);  you’ll probably have to make it in two batches. I’m sure other fresh herbs, such as basil, cilantro, etc. could substitute for the mint.

4 c packed lettuce leaves, in pieces, rinsed and spun dry
1-1/2 c buttermilk
1/2 c packed fresh mint leaves, rinsed and spun dry, plus a couple for garnish
pinch of sugar (optional)
salt and pepper, to taste

1. Put all the ingredients in a blender and whizz until smooth. Taste. Add salt and pepper. Whizz again, then taste. Add more seasonings, if desired.

2. Transfer to a large bowl, or individual bowls and chill, covered, for an hour or so until it’s cold. Garnish with a mint leaf, if desired.
