1/4 c raisins
1 small apple, finely chopped
2 cloves garlic, minced
1/3 c apple juice or water
1 bunch spinach, washed and roughly chopped
2 T pine nuts
salt and pepper, to taste
1. Cover raisins with hot water and set aside. In a large skillet, cook apple and garlic in apple juice over medium heat until the apple is softened, 3 or 4 minutes. Add spinach and cook, tossing frequently, until spinach is wilted, 3 or 4 more minutes.
2. Drain raisins and add to skillet. Add pine nuts and toss to combine. Reduce heat a little and cook for another minute or so. Season to taste with salt and pepper.
