Quinoa must be rinsed before cooking. Rinsing will remove the bitter saponin that coats the seeds. Some quinoa is sold aready rinsed–check the package. If using water here, consider adding some flavoring, such as bouillon cubes.

1 T olive oil
1/2 onion, diced
4 c water or stock
5 to 6 medium-sized carrots
1 c carrot tops, washed and finely chopped
1/2 c quinoa (or millet, bulgur, couscous)
salt and pepper, to taste
fresh thyme leaves

1. Heat oil in a soup pot over medium heat. Add onions and saute until starting to brown. Add remaining ingredients, bring to a boil, then simmer for about 30 minutes. Throw in some thyme leaves (not the stems) a couple of minutes before serving.
