The recipe calls for mayo to dress the salad, but you can use any type of vinaigrette or dressing. The carrot/apple mixture should be chilled before serving, if possible.
1 – 1 1/2 c shredded carrots
2 – 3 apples, diced
1 T lemon juice
1/2 c raisins or other dried fruit
1/3 – 1/2 c mayo or other vinaigrette or dressing
arugula, lettuce or other greens
salt and pepper, to taste
1. Combine carrots, apples, lemon juice, and raisins. Toss with mayo or preferred vinaigrette or dressing. Chill.
2. Either toss carrot/apple mixture with arugula in a serving bowl or put salad greens on plates and spoon carrot/apple mixture over. Season with salt and pepper.
